Idaho potato demand continues to outpace supply levels, pushing prices up on all sizes.

• Norkotah stocks are diminishing weekly; expect Norkotah supplies to be depleted by mid- to late May
• Supplies of large-size 40- to 70-count potatoes continue to tighten; current lots are dominated by 80-count and smaller sizes
  • Burbanks are typically smaller than the Norkotahs, with crops dominated by 80- and 90-count sizes
  • Norkotahs will normally yield larger potatoes; however, remaining late-season stocks are on the smaller side
• A seven-day lead time is recommended, especially for orders consisting of larger sizes
