UPDATE: Frost Damaged Artichokes
December 30, 2014
Salinas, Castroville and Coachella, California Artichoke fields have experienced continuous temperatures below 32 degrees over the last few days, and freezing temperatures are expected to continue through Friday, January 2. As a result, the outer layer of the artichoke is currently displaying a brown frost burn coloring, as well as flake and peel.
• Frost burn Artichokes are strictly a cosmetic condition
• Despite their brown tinged color, the eatable part of the frost damaged artichokes remains perfectly fine to enjoy
• Once cooked, the brown, damaged outer layer peels off resulting in a dark green artichoke
