Handling Tips:
Tender squashes are easily bruised or scarred; handle with care. Rinse whole fruits and vegetables in clean running water prior to using.
General Usage Ideas
- Toss chopped MFC Yellow Squash, MFC Zucchini, MFC Red Bell Peppers, and butternut squash with olive oil, salt, and cumin; roast and toss with RSS Triple-Washed Spinach, lentils, and goat cheese
- Spread goat cheese in pastry-filled tart pans; top with sliced MFC Zucchini and Yellow Squash; sprinkle with Parmesan cheese; bake
- Top traditional pizza crust with tomato sauce, sautéed RSS Triple-Washed Spinach, roasted MFC Red Bell Peppers, grilled strips of MFC Yellow Squash, mozzarella and ricotta cheese
Fall / Winter Usage Ideas:
- Roast RSS Broccoli Florets, sliced MFC Onions, MFC Yellow Squash, and RSS Peeled Garlic at high heat; cool and stir into frittata batter; top with Parmesan breadcrumbs and bake
- Grate MFC Zucchini and MFC Potatoes; stir in eggs, breadcrumbs, and chives; patty and fry latkes; serve with sour cream or applesauce
- Roast RSS Broccoli Florets, sliced MFC Onions, MFC Yellow Squash, and RSS Peeled Garlic at high heat; cool and stir into frittata batter; top with Parmesan breadcrumbs and bake
Spring / Summer Usage Ideas:
