General Usage Ideas

  • Sauté RSS Diced Onions, chopped MFC Zucchini, chopped MFC Bell Peppers, and RSS Washed & Trimmed Cilantro; add corn tortillas chopped into triangles; when tortillas are crisp, stir in enough tomato sauce to coat; top with grated Cotija cheese; serve with side of refried beans and RSS Pico de Gallo Guacamole
  • Toss together chopped MFC Cucumbers, RSS Diced Onions, baby dill, sour cream, horseradish, and freshly cracked black pepper; serve with whitefish
  • Mix softened butter, RSS Lime Juice, lime zest, salt, minced Serrano chile peppers, and RSS Diced Onions; add dollop of compound butter to broiled fish such as trout and tilapia

Fall / Winter Usage Ideas:

  • Sauté RSS Diced Onions and MFC Mushrooms; cool and combine with shredded MFC Potatoes, beaten eggs, cream, and thyme; pour into pastry crust and bake
  • Mix RSS Diced Onions, chopped MFC Mt. Vernon Red Potatoes, RSS Washed & Trimmed Parsley, and pancetta in a hot, oiled pan; sauté until hash is browned; serve on breakfast buffets

  • Sauté RSS Diced Onions, MFC Red Seedless Grapes, and Italian parsley; serve seared sea scallops over top
  • Sauté RSS Diced Onions, RSS Peeled Garlic, minced MFC Red and Yellow Bell Peppers, and thyme sprigs; add sablefish fillets and cooked until browned on one side; flip and add white wine and saffron; simmer on low until liquid reduces and fish is tender

Did You Know?

The onion belongs to the Lily family, which also includes numerous beautiful flowering plants (edible and not). Freshly harvested onions have higher moisture content than storage onions and are lighter in color. From the middle to the end of the storage season (Nov-Mar), onions become drier and more yellow in color.
