Receiving Inspecting:

Romaine should be fresh, crisp, and well-colored. Avoid romaine that appears wilted or has damaged leaves.

Storage Handling:

  • 90-98% relative humidity
Shelf-Life:
14 to 21 days.
Troubleshooting:

Romaine lettuce is sensitive to ethylene gas; exposure to the gas may cause russet (brown) spotting of the leaves. Store away from ethylene-producing fruits and ripening rooms.

Dehydration and wilting can result from storing leaf lettuce in an area with strong drafts or low humidity.

Rapid deterioration may be caused by rough handling.

Dried, translucent leaves can indicate freeze damage.

Usage Ideas:

  • Serve traditional Caesar salad tableside: mix together the dressing ingredients, then toss with chopped romaine and house-made croutons.
  • Grill Romaine hearts; serve with green goddess dressing aside steak.
