Iceberg Lettuce
Common Packs:

12-, 18-, 24-, and 30-count cartons.

Receiving Inspecting:

Heads should be springy-firm and give slightly to gentle pressure. Some browning of the core end is natural and occurs from oxidation after lettuce has been harvested and trimmed. Avoid lettuce that appears wilted, discolored, or with dried or translucent-looking outer leaves.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 32-36° F/0-2° C
  • 90-98% relative humidity
Shelf-Life:
14 to 21 days.
Troubleshooting:

Iceberg lettuce is sensitive to ethylene gas; exposure to the gas may cause russet (brown) spotting of the leaves. Store away from ethylene-producing fruits and ripening rooms.

Wilting and rapid deterioration may occur if lettuce is exposed to drafts or stored at high temperatures. Store properly.

Dried, translucent outer leaves can indicate freeze damage.

Usage Ideas:

  • Give cool Iceberg lettuce and tomatoes zing with creamy bacon-horseradish dressing.
  • Top fish tacos, carne asada burritos, and chicken tostadas with shredded Iceberg lettuce.
