Lettuce, Bibb/Butter

Bibb or Butter Lettuce
Common Packs:

12- and 24-count cartons.

Receiving Inspecting:

Heads should appear fresh with even-colored leaves that exhibit a soft, buttery texture. Avoid lettuce that appears wilted or shows signs of discoloration or decay, dark butt-ends, yellow-tipped leaves, or leaves showing cracked ribs.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 32-36° F/0-2° C
  • 90-98% relative humidity
Shelf-Life:
14 to 21 days.
Troubleshooting:

Bibb lettuce is sensitive to ethylene gas; exposure to the gas may cause russet (brown) spotting of the leaves or loss of green color. Store away from ethylene-producing fruits and ripening rooms.

Wilting may occur if lettuce is stored in an area with low humidity. Store properly.

Yellow leaves can indicate freeze damage.

Usage Ideas:

  • Toss lettuce with pepper radishes, snipped chives, crumbled bacon, and creamy house-made Ranch dressing.
  • Fill lettuce cups with mixture of chopped chicken, minced red onions, cilantro, lime juice, and crushed peanuts.
