Receiving Inspecting:

Choose coconuts that are heavy for their size and “slosh” when shaken. Avoid fruit with cracks or that appear wet around the eyes.

Coconuts may be treated with a wax coating or film-wrapped to help prevent moisture loss.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 32-36° F/0-2° C
  • 90-98% relative humidity
Shelf-Life:
30 days.
Troubleshooting:

If exposed to warm, humid conditions, coconuts may become moldy. Store fruit at 32-36° F/0-2° C.

Light weight for size generally indicates moisture loss. Extreme temperature fluctuations or rough handling may cause cracked shells.

Usage Ideas:

  • Garnish cheesecakes, puddings, layer cakes, and cup cakes with grated, toasted coconut.
  • Add grated coconut to shrimp batter; deep fry and serve with mango dipping sauce.
