Receiving Inspecting:

Good quality snap beans should have long, straight pods and be well-colored. They should be free of decay or blemishes and snap easily when bent.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 85-95% relative humidity
Shelf-Life:
4 to 5 days.
Troubleshooting:

Pitting and russeting can indicate chill injury.

Wilting and shriveling may result if beans are stored in areas with low humidity.

Storing beans at high temperatures combined with high humidity may cause rapid decay or mold.

Yellowing can occur if beans are exposed to ethylene gas. Store away from ethylene-producing fruits and ripening rooms.

Usage Ideas:

  • Add steamed snap beans to creamy potato salad made with hard-boiled eggs, diced red onions, red potatoes, mayonnaise, and Dijon mustard.
  • Stir-fry snap beans, tofu cubes, and sliced onions in sesame and peanut oils; when onions brown, add spicy chili paste; serve with jasmine rice.
