Fava Beans
Common Packs:

5-, 10-, 25-, or 30-lb. cartons

Receiving Inspecting:

Choose shiny, well-colored pods. Beans inside should be of uniform shape and size. Avoid beans that show signs of mold.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 32-36° F/0-2° C
  • 90-98% relative humidity
Shelf-Life:
7 to 14 days.
Troubleshooting:

Shriveling, softening, and yellowing may result if beans are stored at high temperatures.

Yellowing can also occur if fava beans are exposed to ethylene gas. Store away from ethylene-producing fruits and ripening rooms.

Usage Ideas:

  • Mash cooked fava beans with mint and cream; serve grilled halibut over top.
  • Spread mashed fava beans on crostini; top with slice of Blood orange and chopped fennel.
