Sweet Baby Broccoli Bruschetta

These hand-held snacks are easy to make, ideal starters at catered events or cocktail hours.

Ingredients: 

1 baguette, sliced into 24 rounds

1/2 C olive oil

24 oz. Ready-Set-Serve Sweet Baby Broccoli, steamed and chopped

2 C Markon First Crop Tomatoes, chopped

1/2 C Markon First Crop Basil, chopped

4 cloves, Ready-Set-Serve Peeled Garlic, minced

1 tsp. kosher salt

1/4 tsp. black pepper

Instructions: 

Preheat oven to 350 degrees F.

Arrange bread rounds on baking sheet. Brush oil over bread (using 1/4 cup total). Bake until browned (two to five minutes).

Mix chopped sweet baby broccoli, tomatoes, basil, garlic, salt, pepper, and remaining olive oil in mixing bowl.

Top each bread round with vegetable mixture and serve.
