Green Leaf, Shrimp, and Cannellini Bean Salad

This light, protein-rich salad combines Cannellini beans, boiled shrimp, and crisp green leaf lettuce.

Ingredients: 

8 oz. Markon First Crop Green Leaf Lettuce, rinsed and chopped

2 cups Cannellini beans, cooked

16 shrimp, peeled and boiled

Salt and pepper, to taste

Instructions: 

Toss all ingredients together. Put equal portions of lettuce, beans, and shrimp on four serving plates. Serve with house-made dressing.
