Fonio, Spinach, and Tomato Salad

Fonio, an ancient African grain, is nutritious and fast-growing, making it an excellent choice for salad menus.

Ingredients: 

2 C fonio

3 C vegetable stock

12 oz. Ready-Set-Serve Baby Spinach

2 C Markon First Crop Grape Tomatoes, charred

4 oz. goat cheese

Instructions: 

Cook fonio with vegetable stock in a rice maker or pot on stove. When all liquid has been soaked into the grains and they are firm, yet fluffy, toss with remaining ingredients.
