Black Bean Nachos

Give your patrons a healthier version of this beloved guilty pleasure with a fiber-rich, vitamin-packed appetizer for two.

Ingredients: 

4 oz. corn tortilla chips

4 oz. low fat Cheddar cheese, shredded

1 cup black beans, cooked

1 Ready-Set-Serve Avocado Halve, cubed

1/2 cup Markon First Crop Tomatoes, chopped

1/2 cup Markon First Crop Red and Yellow Bell Peppers, roasted and chopped

1/4 cup corn

1/4 cup queso fresco, crumbled

1/4 cup Ready-Set-Serve Washed & Trimmed Cilantro, chopped

Instructions: 

Cover tortilla chips with beans and grated Cheddar; melt cheese under the broiler. Top with avocado, tomato, bell peppers, and corn. Crumble queso fresco over all and garnish with cilantro.
