Basil-Spinach Soup

Ideal for spring and summer menus, this vibrant, refreshing soup is packed with vitamins, minerals, and delicious garden flavors. An excellent choice for on-trend diets as it’s naturally vegetarian, gluten-free, and sans dairy.

Ingredients: 

2 C raw cashews, soaked

3 C soda water

3 C Ready-Set-Serve Triple-Washed Spinach

1 C Markon First Crop Basil

1/2 C Ready-Set-Serve Lemon Juice

3 Tbsp. roasted Ready-Set-Serve Peeled Garlic

3 Tbsp. honey

1 1/2 tsp. kosher salt

1/4 tsp. black pepper

Instructions: 

Combine cashews and soda water in a blender or food processor and mix until smooth. Add remaining ingredients and process until smooth. Chill and serve. Garnish with basil, cashews, and spinach if desired.
