Receiving Inspecting:

White sapotes are best when received while still hard and allowed to ripen at room temperature. Sapotes ripen very quickly and are susceptible to bruising; handle with care. A ripe sapote will give to gentle pressure.

Storage Handling:
 

Short-term storage recommendation (7 days or less):

Unripe (to ripen)

  • 60-65° F/16-18° C; store outside of the cooler
  • 85-95% relative humidity

Ripe

  • 45-50° F/7-10° C; store in the front of the cooler
  • 90-95% relative humidity
Shelf-Life:
14 to 21 days.
Troubleshooting:

Chill injury displays as brown discoloration of the skin and increased decay. To prevent chill injury, do not store below 45° F/7° C.

Usage Ideas:

  • Add peeled, chopped white sapotes to strawberry smoothies.
  • Toss peeled, sliced white sapotes with romaine hearts, crumbled bacon, and red radish vinaigrette.
