Receiving Inspecting:

Choose radicchio with well-shaped heads and compact leaves. Leaves should be dark maroon-red with white veins.

Troubleshooting:

Radicchio may lose its color if exposed to sunlight. For best quality, store radicchio in a dark area away from direct sunlight.

Loss of leaves and a decrease in color intensity can occur if radicchio is exposed to ethylene gas; keep away from ethylene-producing fruits and ripening rooms.

Water-soaked appearance and sloughing off of outer leaf tissue are indications of freeze damage; store properly.

Usage Ideas:

  • Fill grilled radicchio leaves with fresh ricotta; drizzle with balsamic syrup; garnish with torn basil.
  • Top whole wheat pizza crust with puréed white beans, grilled radicchio, baby spinach, sliced sausage, and Parmesan cheese; bake.
