Plums should be smooth, plump, and fairly firm, with coloring consistent with the specific variety. Avoid plums with punctured or discolored skins or
that appear shriveled, soft, or leaky.

Troubleshooting:

Flesh browning and loss of flavor indicate age. Do not hold for long periods of time once plums become soft and ripe.

Flesh browning and mealy texture can be caused by chill injury. Store properly.

Usage Ideas:

  • Grill halved plums and duck breasts; serve over sautéed spinach.
  • Press plum halves into frangipane batter; bake in pastry crust; serve with ginger whipped cream.
