Receiving Inspecting:

Pineapples should be heavy for their size, well-shaped, and fresh-looking with dark green crown leaves. Shells should be dry and crisp and range in color from greenish-brown to golden-brown. Color of shell does not indicate ripeness or sugar content. Pineapples do not ripen after harvesting; they are picked when fully ripe.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 46-48° F/8-9° C
  • 85-95% relative humidity
Shelf-Life:
14 to 21 days.
Troubleshooting:

Dull appearance, water-soaked flesh, dark core, and rapid decay are indications of chill injury. To prevent chill injury, do not store below 45° F/7° C.

Usage Ideas:

  • Thread pork cubes, pineapple chunks, and red onion slices; grill.
  • Toss cooked black-eyed peas, minced pineapple, chopped yellow bell peppers, and creamy cilantro dressing; serve with burgers and sandwiches.
