Receiving Inspecting:

Unripe - fairly firm with no cuts or bruises.

Ripe - slightly firm, yielding to gentle pressure at the stem end. Skin color should be consistent with variety.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

Ripe

  • 33-34° F/0-1° C; store in back of cooler
  • 90-98% relative humidity

Unripe

  • 60-65° F/16-18° C; store outside of the cooler
  • 85-95% relative humidity
Shelf-Life:
30 days.
Troubleshooting:

Water-soaked appearance denotes freeze injury. Low humidity can cause shriveling. Bruising and scuffing indicate improper handling.

Usage Ideas:

  • Poach whole, peeled D'Anjou pears with star anise in red wine; serve with cinnamon whipped cream.
