Woodear Mushrooms

Receiving Inspecting:

Mushrooms should have a fresh, well-shaped appearance, firm texture, and be free of spots. Size and color do not affect quality. Open veils are not a sign of poor quality. Open veils on certain varieties simply indicate a more mature mushroom with a richer, deeper taste. Avoid mushrooms that show signs of deterioration, mold, or that appear slimy.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 34-36° F/1-2° C
  • 90-98% relative humidity
Shelf-Life:
7 to 14 days.
Troubleshooting:

Dark spots and slimy texture indicate improper storage conditions. Store properly. Do not sprinkle with water or place in plastic bags.

Dehydration and general deterioration can occur if mushrooms are stored in an area with low humidity. For best quality, maintain a humidity level of 90-98%.

Rough handling may cause bruising; keep handling to a minimum. Do not stack heavy produce on top of fresh mushrooms.

Usage Ideas:

  • Simmer mushrooms in ginger-garlic broth; add spinach and serve.
  • Add sautéed mushrooms and chopped chicken to cheese quesadillas.
