Receiving Inspecting:

Unripe mangoes should be firm with green skin. Ripe mangoes should give to gentle pressure; skin color should range from greenish-yellow to yellow with red blush, depending on the variety. Avoid shriveled or discolored mangoes or those with soft spots or bruises.

Storage Handling:
 

Short-term storage recommendation (7 days or less):

Ripe

  • 45-50° F/7-10° C; store in the front of the cooler
  • 90-98% relative humidity

To ripen

  • 55-70° F/13-21° C; store outside the cooler
  • 85-95% relative humidity
Shelf-Life:
14 to 21 days.
Troubleshooting:

Accelerated softening or ripening indicates exposure to ethylene gas.

Pitting or gray discoloration of skin, and uneven ripening indicate chill injury; store properly.

Usage Ideas:

  • Line baked pastry with banana cream; in concentric circles, top with sliced mango, kiwifruit, strawberries, and blueberries.
