Receiving Inspecting:

Good quality garlic should consist of firm, plump bulbs with tightly closed cloves. Outside sheath or skin should be tight and unbroken. Avoid shriveled, soft, sprouting, or moldy bulbs.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 60-65° F/16-18° C
  • 90-98% relative humidity

Maintain adequate air circulation during storage. For extended storage (longer than 7 days), reduce humidity to 65-75%.

Shelf-Life:
30 to 60 days.
Troubleshooting:

Exposing garlic to high temperatures and humidity may promote molding, sprouting, or root growth. If garlic is to be held for longer than 7 days, reduce humidity to 65-75%. Maintaining adequate air circulation will also help prevent molding, sprouting, and root growth.

Usage Ideas:

  • Simmer whole cloves of garlic with white beans and mushroom stock; when tender, purée and serve soup topped with browned mushrooms.
  • Stuff lamb loin with cloves of garlic; roast and slice; serve with garlic-mashed potatoes.
