Receiving Inspecting:

Look for uniformly shaped, firm heads with compact leaves. Avoid Belgian endive with open or green leaves.

Storage Handling:

  • 90-98% relative humidity
Shelf-Life:
14 to 28 days.
Troubleshooting:

If Belgian endive is exposed to sunlight, leaves may open or turn green. Always store in a dark area.

Storing product at high temperatures, or exposing it to ethylene gas can cause leaf browning. Store properly and keep away from ethylene-producing fruits and ripening rooms.

Usage Ideas:

  • Fill Belgian endives with lump crab salad; garnish with long chives.
  • Bake quartered Belgian endives with creamy Roquefort sauce; top with chopped walnuts and Italian parsley.
