Receiving Inspecting:

Carrots should be well-shaped with firm, smooth exteriors. Color should be vibrant orange to orange-red. For best quality, tops should be closely trimmed since they tend to decay rapidly. Avoid flabby, soft, or wilted carrots or product that shows any mildew, decay, growth cracks, or splits.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 32-36° F/0-2° C
  • 90-98% relative humidity
Shelf-Life:
21 to 28 days.
Troubleshooting:

Bitter flavor can develop if carrots are exposed to ethylene gas. Store away from ethylene-producing fruits and ripening rooms.

Improper storage can adversely affect carrots:

  • Wilting may occur if held at low humidity.
  • Decay and sprouting can be caused by high temperatures.
  • Cracks and flabby or discolored skin are signs of freeze damage.

Yellow tips and soft spots indicate age and will result in a poor-flavored product.

Usage Ideas:

  • Mix shredded carrots with green onions, raisins, and low-fat mayonnaise; serve salad with sandwiches, burger, or on salad bars.
  • Toss shaved carrots, shaved fennel, and orange sections with basil vinaigrette.
