Receiving Inspecting:

Look for cabbage that is well-formed, fairly even-colored, and heavy for its size. Green and Red cabbage leaves should be very compact and fairly smooth. Savoy cabbage leaves should be crinkled and less compact. Avoid discolored or wilted cabbage.

Short-term storage recommendation (7 days or less)

Troubleshooting:

Cabbage is sensitive to ethylene gas; exposure may cause yellowing leaves that drop off the head. For best quality, keep away from ethylene-producing fruits and ripening rooms.

Low humidity may cause wilting; store properly.

Leaves separating from stem (at bottom of cabbage) is an indication of age.

Usage Ideas:

  • Make in-house kimchi with chopped green cabbage, sliced onions, garlic, salt, fresh ginger, and cayenne pepper; serve with grilled beef.
  • Sauté shredded red cabbage with sliced onions, chopped Granny Smith apples, and walnuts; serve with pork chops.
