21 days.
Troubleshooting:

Wilting can occur if bok choy is stored in an area with low humidity. Store properly.

Exposure to ethylene gas can cause yellowing and a loss of green color. For best quality, keep bok choy away from ethylene-producing fruits and ripening rooms.

  • Stir-fry chopped bok choy, chopped red cabbage, broccoli florets, and thinly sliced beef; add teriyaki sauce; serve with brown rice.
  • Grill bok choy, Shiitake mushrooms, and green onions; serve with Hoisin sauce.
