Receiving Inspecting:
Skins should be shiny and a greenish-yellow color. Avoid bitter melons with brown spots.
Storage Handling:
Short-term storage recommendation (7 days or less)
- 45-48° F/7-8° C
- 85-95% relative humidity
Shelf-Life:
14 to 21 days.
Troubleshooting:
Water-soaked appearance, pitting, and accelerated decay are all indications of chill injury. Store properly.
Exposure to ethylene gas can cause yellowing and a loss of green color. For best quality, keep bitter melons away from ethylene-producing fruits and ripening rooms.
Usage Ideas:
- Drop chopped bitter melon into Asian broth-based soups.
- Add thinly sliced bitter melon to stir-fries.
