Peas, Green
Common Packs:
5-, 10-, 15-, and 25-lb. packs.
Receiving Inspecting:
Pods should exhibit rich green coloring and should be soft and velvety to the touch. Green peas should have well-filled pods with large, round peas inside.
Storage Handling:
Short-term storage recommendation (7 days or less)
- 32-36° F/0-2° C
- 90-98% relative humidity
Shelf-Life:
7 to 10 days.
Troubleshooting:
Yellow color (loss of green) can develop if peas are exposed to ethylene gas. Store away from ethylene-producing fruits and ripening rooms.
Improper storage can adversely affect peas:
- Wilting and shriveling may occur if held at low humidity.
- Loss of flavor can be caused by high temperatures.
NOTE: Shelled peas are more perishable than peas in pods.
Usage Ideas:
- Steam sugar snap, snow, and English peas until tender; stir in sweet butter and chervil; serve with roasted chicken.
- Add peas to vegetable-tempeh stir-fries.
