Receiving Inspecting:

Good quality broccoli should have fresh-looking, light green stalks of consistent thickness. Bud clusters should be compact and dark green with some purple tinge. When pulled apart, some bud clusters may appear yellow around the edges. This does not affect product quality; it simply means that the clusters were not exposed to sunlight during growing.

Avoid broccoli with open, flowering, discolored, or water-soaked bud clusters and tough, woody stems.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 34-36° F/1-2° C
  • 90-98% relative humidity
Shelf-Life:
10 to 14 days.
Troubleshooting:

Holding broccoli for long periods of time may result in discoloration, loss of buds, or general softening of the product.

Exposure to ethylene gas can cause yellow bud clusters and loss of buds. For best quality, keep broccoli away from ethylene-producing fruits and ripening rooms.

Usage Ideas:

  • Purée steamed broccoli and roasted garlic; stir in beaten egg and bread crumbs; lightly fry and serve with roasted red pepper dipping sauce.
  • Sauté broccoli florets with pine nuts and golden raisins.
