“When I was growing up in our small village in Holland, we had lots of apples, cherries, and strawberries from my grandparent's farm, but I do not remember eating fresh vegetables. My mom typically cooked with canned spinach, green beans, and carrots. That was all I knew. Today, my diet is 95% fresh and plant-based. To me, there is nothing like a big, colorful green salad with chopped sweet peppers, fresh beets, and more. I still cook some of my old favorite childhood dishes, like Spinazie Stamppot (potatoes mashed with spinach), but I use fresh, organic spinach instead of canned. Yum!”
